NTC (Negative Temperature Coefficient) is a  resistor with variable resistance that changes depending on the temperature. The advantage of NTC is that it can measure a large temperature range, and measuring it with a voltage divider is very easy.

The Shunt Resistor is a special type of resistor with small resistance which allows large currents to pass through it. This is useful for measuring the current in a circuit: due to the Ohm’s law and voltage drop on the shunt resistor, we can know exactly which current passes through it. For example, for this resistor whose maximum current is 10A, the voltage drop at that current will be exactly 75mV (0.075V). Using a precise ADC, we can accurately measure the current of our consumer or power source.

thermocouple sensor is a temperature measuring device, with its range usually bigger than standard sensors. If you’ve ever bought a multimeter and got some kind of temperature sensor, that is the thermocouple.
